While the most common grills these days are gas, cooking with hardwoods or charcoal can produce better tasting results. To start a charcoal or wood fire, use starter sticks (rather than lighter fluid) to keep chemical tastes out of the food.
Ceramic charcoal cookers, like the Big Green Egg, can be used for grilling or slow cooking.
